Born into a modest family in Bœurs-en-Othe, Lucie Fandard went to Paris to study science. D. in physiology and an agrégation in natural sciences, during which time she met her husband Arthur Randoin. After a spell at the Oceanographic Institute, she joined the Société Scientifique d'Hygiène Alimentaire, where she became head of the physiology laboratory in 1924. She remained there for 36 years, working in these laboratories co-financed by the Ministry of Agriculture and the CNRS École Pratique des Hautes Études, above which she lived. Her thesis was on blood sugar. At the SSHA, she isolates B vitamins, which are essential for the body's use of sugar, followed by vitamin C. In the SSHA's calorimetric chamber, she measures the calorie, defined as the unit of measurement of the energy provided by food. This work led to the development of the first food composition table in 1937. It had a major application in the context of wartime shortages, during which it conducted national food surveys. Nutrition was founded as a new discipline to be taught. With Dr. Trémolières, she created the profession of dietician and the state diploma leading to it. She took part in disseminating knowledge on the subject, with an exhibition at the Grand Palais, radio talks and brochures on healthy eating. She was the second woman to join the Académie de Médecine in 1946, a member of the Académie des Sciences, General Secretary of the SSHA in 1942, and President of the Société de Chimie Biologique in 1945.
